Just one of our decadent breakfasts this week We Eat So Well …and I want to talk about it. After three or four days of consuming whatever the heck we fancied in Crested Butte—including an assortment of things we don’t usually eat, like ice cream and a bucket of fried chicken—it’s been nice to return to our whole foods-centric lifestyle. Hi Everyone, Happy Monday! oh its soooooo good to be back 🙂 Seriously though, I am so glad I am posting here again, I have so many awesome recipes to post for you guys on Mondays 🙂 I have been making these cookies a few times a week! They have no added OIL or sugar in them but still delicious and sweet! This is a healthy NO FAT cookie people! You will need: 7 Pitted Medjool Dates. 1 cup oat flower. ( just blend oats ) 1/4 tsp baking powder. 1/2 TBS Cocoa powder. 1/2 tbs cornstarch or Tapioca powder. 1/2 tsp vanilla extract. 1/2 cup non-dairy milk. 1/4 cup vegan chocolate chips. a few drops of chocolate flavored stevia drops ( Optional) This recipe makes about 11-12 medium sized cookies, depending on how thick or thin you make it! really just have fun with it and experiment! Hi everyone, I have a bit of a later start today, but I also finish later. After today I’ll only have three days until my holiday 🙂 Today I have a review of snack bars for you, I have been able to try a few Nakd bars but this post contains three different brands. The first bar I tried was The Primal Pantry’s macadamia and coconut paleo bar, I’m not fussed on trying a paleo diet but this bar is vegan and sounded tasty so I bought it. These bars are gluten free, grain free, and also free from refined sugar, GMOs, soya, vegetable oil and sulphites. Much like the Nakd bars it’s full of simple ingredients and is raw, it has a lighter colour than most other bars that I’ve seen. Unlike some coconut products that I’ve tried recently the coconut was not soapy, it was just creamy and delicious and the strips of coconut added another texture to the bar. Today I’m sharing with you my favourite family meal to cook; enchiladas. These are actually really easy to make but look quite impressive when you serve them. They get devoured in my house every time; by vegans and non-vegans alike. Another plus is that a lot of the ingredients are staple pantry or freezers items and so you can often make these as a last minute meal. Life According to Jamie Figs are one of my favorite fruits. Well, I love most fruits, but figs are up there. I think I even had them on my monthly favorites one month last summer. I also love prosciutto, the Italian cured ham. It’s a well-known fact that salty and sweet go together so well. A popular appetizer are prosciutto wrapped melons, but an appetizer or snack that you may not hear about as often is prosciutto wrapped figs. This isn’t really a recipe post, because there’s nothing to it. I washed and cut up some figs, wrapped some strips of prosciutto around the figs and that was it!
