My Obsession Monday: Coconut Bake

Warning: I’m about to brag a little about my husband. šŸ˜‰ My man is pretty hot and he’s been working his butt off weight training all summer. He definitely motivates me to keep going. Gains, yo! Because he’s working on building muscle, he eats a lot of protein and because he loves me, he gets up most mornings and makes us breakfast. I am sooooo lucky!Ā However, there are days when he wants to sleep in or I have extra bananas I need to use so I have an easy breakfast alternative to our usual eggs and bacon (at least for me – he’s allergic to coconut – yes, his life is a little bit darker because of it). It is super easy to make, very quick, nutritious (low carb, gluten free, AND dairy free), and tastes a little like banana cake. FOR BREAKFAST! Seriously, it takes about 5 minutes…

Gluten Free French Toast.

*serves 1 =210 calories per serve 2 slices PureBred Bakery gluten free raisin bread 1 egg white 1/2 teaspoon vanilla essence 1/2 teaspoon cinnamon powder 1 scoop greek yoghurt 1/2 banana 3 sliced strawberries 1.Ā Toast raisin bread until brown 2. In a shallow bowl whisk egg white, vanilla essence and cinnamon powder until combined 3. Once toast has popped, drop slices one at a time into egg mixture 4. Ensure each side of bread is coated and moist 5. Add slices to a pre heated non-stick fry pan and pan fry for 1-2 minutes until golden 6. Remove from pan 7. Add to serving plate and top with greek yoghurt, banana and strawberry slices 8. Enjoy whilst warm. OPTIONAL TOPPINGS: maple syrup, peanut butter, honey, coconut, mixed berries, bacon… anything goes!

Similar to the mac and cheese, you use the microwave or oven for this meal, and I chose the oven.
