Apple & Peach Crostata

Crostata’s are a dessert that I really enjoy making. If you’ve never heard of a crostata before, it’s essentially an open-faced pie. You can make yours with any kind of filling you want. For the one I’m sharing today I used apples and peaches – perfect for the upcoming summer season and on/off spring days we’re having now. First, peel and cut your fruit. Then, I mix the fruit with brown sugar, flour, sugar, cinnamon, and lemon juice. The lemon juice is to help the fruit from browning. After giving the filling a good mix, ¬†I brush egg wash onto pie crust dough and then¬†carefully pour/spoon the fruit into the center of my pie crust dough. Next, fold the sides towards the center, slightly overlapping the sections. Brush some egg wash onto the top/sides of the crostata and sprinkle some sugar onto the dough. I also put a few pats of butter onto the exposed fruit. Bake for about 30 minutes or until the crostata is a nice…

The Donut Craze, Gluten-Free Edition

The mourning of all the gluten-filled foods can be tough, but scavenging and finding the best gluten-free recipes is all apart of the life of a gluten-free person. Donuts are probably the thing people with gluten-free intolerances miss the most. After much time experimenting, the best (and easiest) recipe for gluten-free donuts is finally found. It was pretty simple for me and this is all you need: 1 ¬ľ cups pancake mix 1/4 egg 2 tablespoons sugar 1/2 teaspoon cinnamon 1/3 cup water Supplies: Mixing bowl Spoon Deep frying pan Oil Stove Slotted spoon Paper towel Topping: 1/2 cup sugar 2 teaspoons cinnamon Paper lunch bag In a large bowl, mix together the pancake mix, water, egg and small amounts of sugar and cinnamon. Mix these ingredients together until they form a dough like substance and are well blended. ? Using the frying pan pour about 1 inch of oil. Turn the heat on high and allow the oil time to reach a higher temperature, nearly a boil. Once…

Easy 2 Ingredient Oatmeal Banana Cookies

Trying to lose weight is not a lot of fun, especially if you have a big weight loss goal like I do. However, through trial and error over the years, I have learned that depriving myself of everything I love will not work for the long term and can lead to a binge of all things brownie. I think in the maintenance phase, the 80/20 rule works well (80 percent healthy food for fuel and 20 percent food for comfort) and in the losing weight phase, I raise that number to 90/10 or even 95/5 (sorry). The best approach is finding healthy food that tastes like comfort food so that you can make smart choices even when you’re “cheating.” I personally have never met a cookie that I didn’t like, so I decided to find a way that I could eat a cookie every single day and still find success with losing weight. Lo and behold, I have done it and now I’d like to share my easy 2 ingredient…

I love warming the house up on a chilly day with the stove & these cookies. In the winter our neighbor does a lot of the snow removal in our driveway – so I always make sure to thank him the best way I know how. So today, this happened… permission to judge! I don’t think I need to actually write a post here. You can clearly see for yourself that today was a bad day for the diet. But it’s ok. As with life nowadays, I’m not going to beat myself up about it. Just move on, and continue to try… I mean, how is anyone supposed to turn away from this?? Ok, one friend did – yay her. But I couldn’t. Nu uh! Not a chance! Needless to say I couldn’t finish it, but I god damn well tried! It was a Galaxy flippin’ Cheesecake… go figure!

Strawberry Protein Cheesecake

?? So, a few months back I posted my low fat protein pumpkin cheesecake recipe. I posted some recommendations of other flavors at the bottom of that recipe, but I still had people complaining that they don’t like pumpkin and don’t know how to modify for the recommended substitutions. So I decided to help out!! This is the exact same recipe I used a few months back, just modified without pumpkin pur√©e.? I made a delicious strawberry cheesecake and it turned out fantastic!! I feel like I’m cheating on my diet, but I’m not! The best part of this cheesecake, aside from it being low calorie, low fat, and delicious — is that it is so versatile. You can make whatever flavor you fancy by trying out different yogurt and protein powder flavors. Seriously, get creative!!! ?? Ingredients: 16 ounces fat free cream cheese (room temperature works best) 2 individual package Dannon Light n Fit Greek Yogurt (I chose to use Strawberry Cheesecake flavor, but you can…
