I love chickpeas. Like, seriously. I could write a sonnet about chickpeas. Chickpeas are cheap, tasty and protein filled beauties and I don’t know what I would do without them, and they are also fabulously cheap! This recipe is my take on the more traditional spinach and chickpea combo; kale has a slightly sweeter taste, but I prefer it personally. What you need: A can of chickpeas, about half a pack of kale, olive oil, an onion. Spices: Asafoetida, fenugreek, tumeric, chilli powder, cumin, coriander seeds, mustard seeds, salt, pepper, chilli flakes 1: Heat oil in a large saucepan and add some asafoetida and mustard seeds. Heat the oil over a medium heat for a few minutes (chop the onion in the mean time) until it becomes fragrant. Then turn up the heat, add the onions and spices and fry for five-seven minutes 2: Add the kale and sauté on a medium heat for a few minutes. It’s December – the best time of the year – and officially summer holiday in South Africa. Without college, my day-to-day has been left with an almost empty schedule and a lot of  unproductive free time. I’ve had to physically pull myself away from the allure of binge watching series (I’m talking  The Mindy Project all day, errryday) or watching Hotline Bling remakes over and over (so, so good). As  fulfilling as both of those things might sound, after a day or two of doing them (okay fine a week) I needed to take a step away from technology. It’s always the right time to start doing things that make your soul happy and I really want to cherish the free time I have while on holiday.  So here I am, experimenting every damn day in the kitchen because my heart either belongs there or on a beach somewhere in Ibiza – and I just can’t seem to have both this time. kale chips. once a phenomenon, still well known + extremely overpriced in grocery stores. i walk by small packages of kale chips for 8 dollars! say whaaaa? buy a bundle of kale + bake some! well, when i first made kale chips i did it all wrong. they were soggy, burnt, or just too weird. through many batches of kale chips i have discovered my 5 tricks to follow when on the pursuit of the perfect crisp. dry as a bone: after washing the kale + removing stems be sure to make the kale as dry as possible. by leaving water, it creates a soggier chip because the moisture steams in the oven. less is more: with olive or coconut oil a tiny bit goes a long way- remember you can always add more if after covering they seem too dry. i make small batches at a time, therefore i add about 1/2 a tbsp. same applies here for the amount of kale on the baking sheet. try not to…
