I’ve eaten a whole lot of veggie burgers throughout my vegetarian life. Rarely have I ever made them myself, and this recipe really outshines anything you can buy in the freezer aisle. It takes a little bit longer to make this recipe, so if you’re always in a time crunch after work like me, hold off on this recipe until the weekend. I often find myself facing a major problem in trying new recipes: I don’t have a food processor. But I found a secret hack to the lack of food processor- an electric mixer. It seriously works like a charm! This recipe in particular comes from Ambitious Kitchen, but I made a few alterations that worked better for me. Day: Sh*t got dirty!

If you don’t judge me… I’ll judge you! I ate this today. I’m disgusted with myself. Although, whether that’s because I spent £8 on a freakin’ burger and £4 on chips and couldn’t finish it, OR whether it’s because I thought it was a good idea to have this in the first place. It looks like food only pigeons would eat! I know… My names Snacks and I eat dirty food… I’ve since then, been 8hrs off the burgers. The road to success, RIGHT THERE!  But’s lets rewind a second. £8. For THAT I was hoping it was cooked by strapping, tanned, beefed up Aussie while stood in his front lawn at his BBQ in the burning sun, before being flown into my hands by the burger angels. Easiest Vegan Burger Recipe

My second ever attempt at constructing a burger recipe from scratch and I couldn’t be happier with the results! I can hands-down say this is the best burger – veggie and non-veggie included – I have ever eaten. And yes, that is my ego you see radiating out from your screen. If you’d prefer a crunchier burger feel free to fry these patties, once shaped. I instead baked them on a baking sheet for about 30 minutes, flipping once. This gave them a lovely crispiy texture and obviously is the healthier option.  If you find that your patties are more than a little fragile I’d suggest baking as this will keep them together most effectively. My burgers stayed together beautifully for a vegan recipe! Because I didn’t have a food processor the sweet corn was not combined as well as I’d have liked and so some of them came loose once baked.
